Veggie Flautas with Sweet Potatoes and Spinach


  • 3 large sweet potatoes
  • 6 flour tortillas
  • 100g fresh baby spinach
  • 180g white cheese (it’s looks like feta cheese but it’s slightly different)
  • 60g cheddar
  • pepper
  • olive oil

Cooking Instructions:

  1. Boil some water and cook the potatoes according to instructions on the package. Once they are cooked, quickly heat up a tortilla sheet in the microwave (for 10-20 seconds), this will make them a bit softer and easier to fold. Start of with a bottom layer of baby spinach (uncooked), followed by chopped up pieces of sweet potato, slices of cheddar and feta. Finish of with just a few grinds of pepper and roll them up.
  2. Heat up some oil in a frying pan and fry the flautas until crispy.
