Pineapple Lechon Paksiw Recipe

Ingredients:

  • 1 kg leftover lechon or lechon kawali, cut into serving portions
  • 1 can pineapple, diced
  • 1 pc white onion, diced
  • 1 head garlic, minced
  • 2 pcs bay leaves
  • 1 tsp black peppercorns
  • 2 tbsp brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup pineapple juice
  • 1 tsp cornstarch dissolved in 1/4 cup water
  • 2 cups water
  • Ground black pepper to taste
  • Salt to taste


Cooking Instructions:

  1. Put all the ingredients in a pot, except for the cornstarch mixture.
  2. Cook until pork meat starts to get tender and the vinegar is cooked.
  3. Pour the cornstarch mixture.
  4. Stir and simmer until the sauce thickens.
  5. Serve and enjoy your pineapple lechon kawali!
