Pasta Primavera with Fried Scampi


Ingredients For Pasta:

  • ¼ cup Extra virgin olive oil
  • 2 Tbsps Garlic , minced
  • ½ cup Onions , chopped
  • ½ cup Carrots , diced
  • ½ cup Zucchini , diced
  • ½ cup Eggplant , diced
  • 1/2 cup Red bell peppers , diced
  • ½ cup Green bell peppers , diced
  • 2 packs Clara Olé Chunky Spaghetti Sauce with Basil 225 g
  • 1 pack Clara Olé Italian Style Spaghetti Sauce 250 g
  • ½ tsp Salt
  • Freshly ground black pepper
  • ½ tsp Sugar
  • 2 Tbsps White wine
  • ¼ cup Fresh basil leaves
  • ¼ cup Penne pasta , cooked according to package directions

Ingredients For Fried, Breaded Scampi:

  • 1/4 kilo Medium-sized shrimp , peeled
  • Salt and white pepper
  • ½ cup Flour
  • 1 Egg
  • 2 Tbsps Milk
  • Japanese breadcrumbs

Cooking Instructions:

  1. In a medium sauce pot, heat olive oil. Sauté garlic and then onions. Add carrots, zucchini and eggplant, waiting 1 minute before adding the next ingredient. Add red and green bell peppers. Pour in the Clara Olé Chunky Tomato Sauce with Basil and the Clara Olé Italian Style Spaghetti Sauce. Season with salt, pepper and sugar. Cover and simmer for 15 minutes. Pour in white wine and allow to simmer, uncovered. Adjust seasoning. Turn off heat and mix basil leaves.
  2. To prepare fried scampi, season shrimps with salt and white pepper. Holding each shrimp by the tail, dredge pieces in flour. Dip in egg and milk mixture. Coat with Japanese breadcrumbs. Fry in hot oil until golden. Set aside. Combine cooked penne pasta with vegetable sauce and top with breaded shrimp.
