Special Puto Pao with Asado Filling and Salted Egg & Cheese Toppings
Ingredients
For asado filling:
¼ kg ground pork
2 cloves garlic, minced
1 pc small onion, minced
1 tbsp brown sugar
2 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp cooking oil
½ tbsp cornstarch
1 tbsp water
For puto mixture:
1 ½ cup cake flour
1 ½ tsp baking powder
½ cup white sugar (additional ¼ cup for meringue)
Egg whites, from 4 pcs eggs
¾ cup water
Sliced salted egg, for toppings
Cheese strips, for toppings
Procedures
For asado filling:
Make a slurry by combining water and cornstarch. Set aside.
Heat cooking oil in a pan. Add garlic and onion. Sauté until fragrant.
Add the ground pork. Cook until slightly brown.
Add brown sugar, soy sauce, and oyster sauce. Stir well.
Pour in the slurry to thicken the sauce. Stir well. Turn off the heat when done.
For puto mixture:
Sift the flour, baking powder, and white sugar. Combine to a mixing bowl. Mix well.
Gradually add water until the texture is smooth. Set aside when done.
Beat egg whites using an electric hand mixer to make meringue. Gradually add ¼ cup white sugar while mixing. When the texture is smooth and fluffy, it is done.
Fold the meringue into the puto mixture.
Prepare puto molders with cupcake liners.
Fill half of a molder with the puto mixture. Add about 1 tbsp of asado filling. Pour puto mixture again to cover the filling. Top with 1 slice of salted egg and 2 strips of cheese. Repeat this step until all the mixture, filling, and toppings are consumed.
Arrange them properly in the steamer. (Make sure that the water is boiling already before putting the puto in the steamer.) Cover with a piece of cloth and lid. Steam for about 10-12 minutes.
