1. Pancit ala Pobre
Try this budget-friendly yet flavorful recipe of Pancit ala Pobre! It is so simple to cook with few ingredients compared to other pancit recipes. Usually, when a dish is named ‘Ala Pobre’, it means that the dish is cooked with a lot of garlic, but it may also suggest that the dish is easy to cook and uses cheap ingredients.
Ingredients:
- 200g bihon noodles
- 1/3 cup margarine (Dari Creme)
- 1/2 cup garlic, minced
- 1/2 cup green onions, chopped
- 2 pcs chicken broth cubes
- 4 cups water
- ground black pepper, to taste
- fish sauce, to taste
Procedures:
- Pour water into a pot or deep pan over medium heat.
- Add the chicken broth cubes. Bring to a boil and let the broth cubes dissolve. Stir well.
- Add the bihon noodles. Cook until the noodles are tender. Remove bihon from heat, drain, and set aside.
- Melt the margarine in a pan over medium heat. Add garlic and cook until toasted. (Reserve some toasted garlic for toppings)
- Add the green onions. (Reserve some for toppings)
- Add the cooked bihon noodles, pepper, and fish sauce. Mix well.
- Remove from heat and transfer to a serving dish.
- Top with toasted garlic and chopped green onions.

Ingredients:
- 375g (3 sheets) pancit bihon
- 3 cloves garlic, minced
- 1 pc onion (medium), sliced
- 1 pc red bell pepper (medium), julienned
- 1/4 cup Baguio beans, sliced
- 1 pc carrot (medium), julienned
- 1/2 pc cabbage, shredded
- 2 tbsp celery leaves, chopped
- 1/2 lb chicken, sliced into bite-size pieces
- 1 tsp black pepper
- 1 tsp salt
- 4 tbsp fish sauce
- 1/4 cup soy sauce
- 3 cups chicken stock
- 4 tbsp vegetable oil
- 6 pcs calamansi, for seasoning
Procedures:
- 1. In a preheated wok, heat about 2 tbsp cooking oil.
- Add garlic and onion. Sauté until garlic turns golden brown.
- Add the chicken. Cook until turn brown.
- Add carrot, red bell pepper, cabbage, Baguio beans, and celery. Mix and cook until vegetables are tender yet crisp.
- Remove the cooked vegetables and chicken from the wok. Set aside.
- In the same wok, add chicken stock, salt, pepper, soy sauce, and 2 tbsp vegetable oil. Stir well.
- Add the bihon noodles. Cook until noodles become soft and the liquid evaporates completely.
- Add back the cooked vegetables and chicken. Put more fresh celery for added flavor and aroma. Mix well.
- Serve with sliced fried pork and season with calamansi. Enjoy your pancit bihon!
3. Pancit Canton

Ingredients:
- 400g pancit canton noodles
- 5 cloves garlic, minced
- 1 pc medium-sized onion sliced
- 1/2 cup chicken gizzard, sliced into bite-sized pieces
- 1 pc medium-sized carrot, julienned
- 1 pc medium-sized red bell pepper, julienned
- 1/4 cup Baguio beans, sliced
- 1/2 pc cabbage, shredded
- 1 tsp pepper
- 1 tsp salt
- 1/4 cup soy sauce
- 1/4 cup oyster sauce
- 2 cups chicken stock
- 5 tsp cooking oil
- 6 pcs calamansi, for seasoning
Procedures:
- Heat about 3 tbsp cooking oil in a wok. Add garlic and onion. Sauté until fragrant.
- Add the chicken gizzard. Cook until it turns slightly brown.
- Add about 1 tbsp of soy sauce and 1 tbsp of oyster sauce. Stir and cook for 1 minute.
- While stirring, add vegetables one by one. Start with the carrots, red bell pepper, Baguio beans, and lastly, the cabbage. Cook until the vegetables are tender yet crisp.
- Transfer the cooked chicken with vegetables to a bowl. Set aside.
- On the same wok, pour the chicken stock. Add the remaining soy sauce, oyster sauce, and oil. Add salt and pepper. Stir well.
- Add the pancit canton noodles. Cook until the noodles become soft and it absorbs the sauce completely.
- Add the cooked chicken with vegetables. Mix well then remove from heat.
